Marquee celebrations come with a certain freedom that other fixed venues don’t always afford. The setting is uniquely personal, and the atmosphere and running of the day is entirely yours to shape!
At Fossil Food, we’re completely at home in blank canvas spaces, where all the moving parts are handled with precision and care behind the scenes.
We plan carefully, build exactly what’s needed, and run a smooth, well-paced operation – without you having to worry about those all-important details.
We can handle the logistics!
We work closely with marquee suppliers to make sure the layout fits alongside your plans and the flow of the day. That includes thinking through guest arrival, where drinks and food will be served, and how the space will feel as it transitions from one moment to the next.
If you have a planner, we’ll work alongside them. If you don’t – that’s fine, too - we can act as an organised point of contact for other suppliers on the day, greeting the band, coordinating arrivals, and handling the behind-the-scenes questions so your friends and family can enjoy the celebrations.
A proper kitchen, built around your menu
We can build the kitchen setup that best suits your menu and guest count.
We take care of the hire and logistics for the catering tent and kitchen equipment, including the larger essentials such as ovens, fridge trailers and hot cupboards. It takes more planning, but we have been doing this long enough to know what works, who to trust, and how to keep everything running like clockwork!
What we need from you
To deliver as smooth a marquee service as possible, we only need two things in place: a water supply and sufficient electricity. From there, we build everything else around your event, including equipment, timings, staffing, and the practical flow between kitchen and service.
Warm welcomes and a guest experience that feels effortless
A marquee site is not a traditional venue, so guests may not instantly know where everything is or where they’re supposed to be!
Our job, then, is to create a welcoming, easy experience with clear guidance, attentive service, and the kind of subtle signposting that keeps everyone comfortable.
From the moment guests arrive, our team looks after the atmosphere, often with a drink in hand, something delicious to eat, and a service style that feels friendly and effortlessly well-planned.
Leaving the land as we found it
Many marquee events take place at private homes, and we’re meticulous about treating the land as if it were our own. We remove our catering waste, keep the site tidy throughout, and make sure the kitchen and service areas stay well managed from start to finish.
We can also organise bottle removal for drinks, and we make sure all hire items are packed away, ready for collection. On pickup day, we stay on call to ensure everything goes smoothly and any last-minute questions are handled quickly, so you can relax knowing everything is taken care of.
Planning and timekeeping you can rely on
Without the structure of a traditional venue, timings are more important than usual. With that in mind, we plan the day with precision, coordinate service with your schedule, and keep everything flowing at a pace that feels natural.
If you’d like a key guest to lead certain moments, we will work alongside them. If you would rather we take the lead, we are more than happy to do that, too.
